Instructions

  1. Heat 1 tablespoon of olive oil in a cast-iron skillet on medium heat.
  2. Slice the cooked sausage into coins and add them to the skillet. Cook for 5 minutes on one side, then flip and cook for about 3 minutes on the other side.
  3. Remove sausage from the skillet to a large plate, leaving some sausage oil in the skillet for the veggies. Pour extra oil into a small, heat-proof bowl to reserve.
  4. In the same skillet, add the diced bell pepper, and cook for about 4 minutes on medium heat. If it sticks, add some reserved oil.
  5. Remove the cooked pepper to the plate with the sausage.
  6. Add the sliced zucchini to the skillet and cook for about 3 minutes, adding more reserved oil if needed.
  7. Slice corn kernels off the cob with a knife if not already prepared.
