Description

Birria Grilled Cheese is the ultimate comfort food! This sandwich brings together tender, flavorful beef with melty cheese, all grilled to perfection. It’s messy, delicious, and will quickly become a family favorite.


Ingredients

  • 2 cups shredded beef (preferably birria-style)
  • 1/2 cup red enchilada sauce
  • 1/4 cup diced onions
  • 1/2 cup crumbled queso fresco
  • 1 cup shredded mozzarella cheese
  • 2 tbsp chopped cilantro
  • 4 slices Texas toast (or thick bread)
  • 2 tbsp butter

Instructions

  1. Slow-cook the beef until tender, then shred it.
  2. In a skillet, combine the shredded beef with red enchilada sauce and heat through.
  3. Butter one side of each slice of Texas toast.
  4. On the unbuttered side, layer the beef mixture, onions, queso fresco, and mozzarella cheese.
  5. Top with another slice of toast, buttered side up.
  6. Grill on medium heat until golden brown and the cheese is melted, flipping halfway through.
  7. Garnish with cilantro and serve hot.
