- 1/2 cup red enchilada sauce
- 1/4 cup diced onions
- 1/2 cup crumbled queso fresco
- 1 cup shredded mozzarella cheese
- 2 tbsp chopped cilantro
- 4 slices Texas toast (or thick bread)
- 2 tbsp butter
Instructions
- Slow-cook the beef until tender, then shred it.
- In a skillet, combine the shredded beef with red enchilada sauce and heat through.
- Butter one side of each slice of Texas toast.
- On the unbuttered side, layer the beef mixture, onions, queso fresco, and mozzarella cheese.
- Top with another slice of toast, buttered side up.
- Grill on medium heat until golden brown and the cheese is melted, flipping halfway through.
- Garnish with cilantro and serve hot.
