Description

A delightful mix of sweet and savory flavors featuring fresh blueberries, juicy peaches, crisp cucumbers, and creamy feta cheese tossed in a honey-dijon vinaigrette. Perfect for summer picnics or a light lunch.

  • 1 pint fresh blueberries
  • 2 peaches, diced
  • 2 Persian cucumbers, sliced
  • 1/2 cup crumbled feta
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped basil
  • Kosher salt and fresh ground black pepper to taste

Instructions

  1. In a large serving bowl, combine the blueberries, diced peaches, sliced cucumbers, and crumbled feta. Stir gently to mix everything together.
  2. In a jar with a lid or a measuring cup, combine the lemon juice, dijon mustard, honey, olive oil, chopped basil, salt, and pepper. Shake or whisk until it’s well blended.
  3. Pour the vinaigrette over the salad and mix gently again.
  4. Taste for seasoning and sprinkle on extra basil if desired.
  5. Serve immediately, or cover and chill in the fridge until ready to serve.
