Description

  • 1 1/2 cups sweetened shredded coconut
  • 1 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 4 cups whole milk
  • 4 large egg yolks
  • 2 teaspoons vanilla extract
  • 3 tablespoons unsalted butter
  • 1 pre-baked pie crust
  • Whipped cream for topping

Instructions

  1. Toast 1/2 cup of the shredded coconut in a dry skillet over medium heat until golden brown, stirring frequently. Set aside for topping.
  2. In a medium saucepan, combine sugar, cornstarch, and salt.
  3. Gradually whisk in milk until smooth.
  4. Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens, about 5-7 minutes.
  5. Beat egg yolks in a small bowl. Temper the eggs by slowly adding about 1 cup of the hot milk mixture while whisking constantly.
  6. Pour the egg mixture back into the saucepan and cook for an additional 2 minutes, stirring constantly.
  7. Remove from heat and stir in vanilla extract, butter, and the remaining 1 cup of shredded coconut.
  8. Pour filling into the pre-baked pie crust and smooth the top.
  9. Cover with plastic wrap directly touching the surface to prevent a skin from forming.
  10. Refrigerate for at least 4 hours or overnight until completely set.
  11. Before serving, top with whipped cream and sprinkle with the toasted coconut.
