Description

Creamed spinach is a rich and creamy side dish made with fresh spinach leaves, butter, cream, and flavorful seasonings. It’s a classic accompaniment to steak, chicken, or holiday meals.


Ingredients

  • 1 lb fresh spinach (or 10 oz frozen spinach)
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste

Instructions

  1. Wash and trim the spinach. If using fresh spinach, blanch in boiling water for 1-2 minutes, then drain and chop. If using frozen, thaw and squeeze out excess water.
  2. In a large skillet, melt the butter over medium heat. Add the onion and garlic, sauté until soft and fragrant.
  3. Add the chopped spinach to the skillet and cook for 2-3 minutes.
  4. Stir in the cream cheese, heavy cream, and Parmesan cheese. Mix well until everything is melted and combined.
  5. Season with nutmeg, salt, and pepper. Cook for another 2-3 minutes until the mixture thickens slightly.
  6. Serve warm as a side dish.

Notes

  • You can substitute frozen spinach for fresh to save time.
  • Add a pinch of red pepper flakes for a spicy kick.
  • Make it ahead and reheat gently on the stovetop or microwave.
