Description

Creamy Spring Tortellini with Peas, Asparagus, and Bacon is a delightful dish that celebrates the fresh flavors of spring. This easy-to-make recipe combines the richness of creamy sauce, tender tortellini, and the crispness of fresh vegetables, making it perfect for a family dinner or a special occasion.


Ingredients

  • 9 oz three cheese tortellini
  • 1/2 small yellow onion, thinly sliced
  • 3/4 cup peas (fresh or frozen)
  • 1 cup chopped asparagus
  • 2 large garlic cloves, minced
  • 1 cup heavy whipping cream
  • 1/2 cup shaved Parmesan cheese
  • Salt, to taste
  • Fresh cracked black pepper, to taste
  • 0.25 lb bacon (56 slices), cooked crispy
  • 2 tbsp oil for cooking

Instructions

  1. Cook tortellini according to the package instructions, drain and set aside.
  2. Preheat a cooking pan over medium heat and add oil.
  3. Add onions and sauté until transparent.
  4. Add peas and asparagus. Sauté until asparagus starts to soften.
  5. Press in garlic and season with salt and pepper. Mix well and cook for about 5 more minutes.
  6. Pour in heavy cream while stirring. Add shaved Parmesan cheese and stir until cheese is melted. Adjust seasoning if needed.
  7. Stir in tortellini until completely mixed in and cook for a couple of minutes.
  8. Chop crispy cooked bacon and stir it in right before taking the pan off heat.
  9. Serve hot, garnished with extra Parmesan and black pepper.

Notes

  • Use fresh vegetables for the best flavor, but frozen peas work well too.
  • For extra flavor, consider adding red pepper flakes for a little heat.
  • Make sure to use good quality Parmesan cheese for the best taste.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
