Description

A quick and easy one-pan sausage skillet meal combining flavorful cooked sausage with fresh vegetables like corn, bell pepper, and zucchini. Ready in 30 minutes, it’s perfect for busy weeknights and requires minimal cleanup.


Ingredients

  • 2 cups corn kernels (from 3 cooked ears)
  • 1 tablespoon olive oil
  • 12 oz cooked sausage (Cajun, andouille, or smoked)
  • 1 large red bell pepper, diced
  • 1 large zucchini, sliced
  • 1/2 teaspoon chili powder
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a cast-iron skillet on medium heat.
  2. Slice the cooked sausage into coins and add them to the skillet. Cook for 5 minutes on one side, then flip and cook for about 3 minutes on the other side.
  3. Remove sausage from the skillet to a large plate, leaving some sausage oil in the skillet for the veggies. Pour extra oil into a small, heat-proof bowl to reserve.
  4. In the same skillet, add the diced bell pepper, and cook for about 4 minutes on medium heat. If it sticks, add some reserved oil.
  5. Remove the cooked pepper to the plate with the sausage.
  6. Add the sliced zucchini to the skillet and cook for about 3 minutes, adding more reserved oil if needed.
  7. Slice corn kernels off the cob with a knife if not already prepared.
  8. Combine the cooked sausage, bell pepper, zucchini, and corn kernels in the same skillet. Mix everything well.
  9. Add the reserved oil from the sausage and mix again. Sprinkle in the chili powder and reheat on low heat.
  10. Remove from the heat and top with chopped cilantro before serving.

Notes

  • You might not need any salt since the sausage is usually salty. Adjust to your taste.
  • Use seasonal vegetables for the best flavor.
  • Experiment with different types of sausage for a unique twist.
  • Cooking on medium heat helps keep the veggies crunchy.
  • If using raw sausage instead of cooked, make sure to cook it fully before adding the vegetables.
