- 1 package (30 oz) frozen hash browns
- 2 cups shredded cheddar cheese
- 6 large eggs
- 1 cup milk
- 1 small onion, diced
- 1 bell pepper, diced
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp chopped green onions for garnish
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish
- In large bowl, whisk together eggs and milk
- Add hash browns, cheese, onion, bell pepper, salt and pepper
- Mix until well combined
- Pour mixture into prepared baking dish
- Bake for 45-50 minutes until golden and set
- Let cool 5 minutes before serving
- Garnish with green onions
Notes
- For crispier top, broil last 2-3 minutes
- Can substitute fresh shredded potatoes for frozen
- Add cooked bacon or sausage for meat version
