Description

Ingredients

  • 1 package (30 oz) frozen hash browns
  • 2 cups shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp chopped green onions for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish
  2. In large bowl, whisk together eggs and milk
  3. Add hash browns, cheese, onion, bell pepper, salt and pepper
  4. Mix until well combined
  5. Pour mixture into prepared baking dish
  6. Bake for 45-50 minutes until golden and set
  7. Let cool 5 minutes before serving
  8. Garnish with green onions

Notes

  • For crispier top, broil last 2-3 minutes
  • Can substitute fresh shredded potatoes for frozen
  • Add cooked bacon or sausage for meat version
  • Make ahead: refrigerate unbaked overnight
