Description

Meatloaf Muffins are a fun and tasty twist on classic meatloaf, cooked in a muffin tin for faster cooking times and convenient individual portions. Perfect for busy weeknights or family dinners.

Ingredients

Scale
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper.
  3. Mix until well combined.
  4. Divide the mixture evenly among the muffin tin cups.
  5. Bake for 20-25 minutes, until the meatloaf muffins are cooked through.
  6. Let cool slightly before serving.

Notes

  • If you want extra flavor, try adding some shredded cheese to the mixture.
  • For a healthier twist, use ground turkey or chicken instead of beef.
  • Be careful not to overmix the meat; this keeps the muffins tender.
  • Serve with additional ketchup or barbecue sauce on top if desired.
  • These can be stored in an airtight container in the fridge for up to three days.
  • Meatloaf muffins can be frozen for up to three months.
