Crispy and cheesy, these Parmesan Zucchini Chips are a healthy and delicious snack or side dish, baked to perfection with a flavorful coating of Parmesan and breadcrumbs.


Ingredients

  • 2 medium zucchinis, thinly sliced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or cooking spray

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Slice the zucchinis into thin rounds, about 1/8-inch thick.
  3. In a bowl, mix Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  4. Toss the zucchini slices with olive oil or spray them lightly to help the coating stick.
  5. Press each zucchini slice into the Parmesan mixture, coating both sides well.
  6. Arrange the coated slices in a single layer on the prepared baking sheet.
  7. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  8. Remove from the oven and let cool slightly before serving.

Notes

  • Use a mandoline for evenly sliced zucchini.
  • For extra crispiness, broil for 1–2 minutes at the end of baking.
