Description

A delightful tropical dessert featuring crispy fried pineapple rings soaked in rum, coated with coconut flakes, and served with a creamy rum-infused dipping sauce.


Ingredients

  • 8 pineapple rings (fresh or canned)
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 1 (10 oz) bag sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz cream cheese, softened
  • ½ cup powdered sugar

Instructions

  1. Soak pineapple rings in dark rum and coconut rum for at least 1 hour.
  2. Drain and pat dry, reserving the rum for the dipping sauce.
  3. Set up three bowls: one with flour, one with whisked eggs and coconut milk, and one with coconut flakes.
  4. Coat each pineapple ring in flour, dip in egg mixture, then press into coconut flakes.
  5. Heat oil to 350°F (175°C) and fry pineapple rings for 1-2 minutes per side until golden brown.
  6. Drain on paper towels.
  7. For the dipping sauce, mix softened cream cheese, powdered sugar, and 2-3 tbsp reserved rum until smooth.
  8. Serve warm with the dipping sauce.

Notes

  • For extra flavor, soak pineapple longer (up to 4 hours).
  • Ensure oil is hot enough for a crispy texture.
  • Do not overcrowd the pot while frying.
  • Adjust rum in the dipping sauce for desired consistency.
