A delightful tropical dessert featuring crispy fried pineapple rings soaked in rum, coated with coconut flakes, and served with a creamy rum-infused dipping sauce.

- 8 pineapple rings (fresh or canned)
- 1 cup dark rum
- 1 cup coconut rum
- 1 ½ cups all-purpose flour
- 1 (10 oz) bag sweetened coconut flakes
- 2 large eggs
- ½ cup coconut milk
- Vegetable oil (for frying)
- 4 oz cream cheese, softened
- ½ cup powdered sugar
Instructions
- Soak pineapple rings in dark rum and coconut rum for at least 1 hour.
- Drain and pat dry, reserving the rum for the dipping sauce.
- Set up three bowls: one with flour, one with whisked eggs and coconut milk, and one with coconut flakes.
- Coat each pineapple ring in flour, dip in egg mixture, then press into coconut flakes.
- Heat oil to 350°F (175°C) and fry pineapple rings for 1-2 minutes per side until golden brown.
- Drain on paper towels.
- For the dipping sauce, mix softened cream cheese, powdered sugar, and 2-3 tbsp reserved rum until smooth.
- Serve warm with the dipping sauce.
Notes
- For extra flavor, soak pineapple longer (up to 4 hours).
- Ensure oil is hot enough for a crispy texture.
- Do not overcrowd the pot while frying.
- Adjust rum in the dipping sauce for desired consistency.
