- 1 English cucumber, chopped
- 6 oz feta cheese, cubed
- A handful of chopped fresh mint leaves
- 1 fresh lime, zest and juice
- Sea salt flakes, to taste
- Fresh ground black pepper, to taste
Instructions
- Add the cubed watermelon into a large serving bowl.
- Add the chopped cucumber, cubed feta cheese, mint leaves, lime zest, and lime juice.
- Sprinkle with sea salt and freshly ground black pepper to taste.
- Very gently toss all ingredients to combine.
- Taste and adjust seasoning if needed.
- Serve chilled and enjoy!
