Description

This Simple Watermelon Salad is a refreshing summer dish made with sweet watermelon, crisp cucumber, creamy feta, and fresh mint, all brought together with a zesty lime dressing. Perfect for hot days, picnics, or light meals.


Ingredients

  • 6 cups watermelon, seeded and cubed
  • 1 English cucumber, chopped
  • 6 oz feta cheese, cubed
  • A handful of chopped fresh mint leaves
  • 1 fresh lime, zest and juice
  • Sea salt flakes, to taste
  • Fresh ground black pepper, to taste

Instructions

  1. Add the cubed watermelon into a large serving bowl.
  2. Add the chopped cucumber, cubed feta cheese, mint leaves, lime zest, and lime juice.
  3. Sprinkle with sea salt and freshly ground black pepper to taste.
  4. Very gently toss all ingredients to combine.
  5. Taste and adjust seasoning if needed.
  6. Serve chilled and enjoy!

  • Chill the watermelon before assembling for extra refreshment.
