Description

Sunshine Salad is a cheerful fruit dish that brings a burst of flavor and color to your table. It’s light, refreshing, and easy to make, perfect for summer picnics, family gatherings, or as a quick snack.


Ingredients

  • 1 fresh pineapple, cored and cut into chunks
  • 1 can (15 oz) of Mandarin oranges in light syrup
  • 2 bananas, peeled and sliced
  • 1 box (4 serving size) Jell-O sugar-free vanilla instant pudding

Instructions

  1. Keep the Mandarin oranges in their syrup; do not drain.
  2. Chop the pineapple and bananas into chunks.
  3. In a large bowl, combine all the fruit.
  4. Evenly sprinkle the dry vanilla pudding mix over the fruit (do not mix with milk).
  5. Stir the mixture thoroughly.
  6. Cover and refrigerate for at least one hour before serving.

Notes

  • Make sure to keep the Mandarin oranges in their syrup. This adds extra sweetness and keeps the salad juicy.
